The Best Blueberry Pie Recipe Filling

Hello my beautiful Sweeties. Can you believe it’s 2019!. I can’t. But I feel like the month of January has been jammed packed and so busy. But I haven’t forgotten you guys. Today I want to share my Blueberry Pie Recipe Filling and why it’s so dear to my family.

The Best Blueberry Pie Recipe Filling

I decided to make this recipe because my mom was telling me a story about when she lived in Northern California. My mother as a kid lived on Beale Air Force Base. A United States Air Force base located approximately 8 miles east of Marysville, California. Her father was in the Air Force. She just loved playing and picking berries.

So one day she told her mom, my Grandmother with the famous Blacks Folks Sweet Potato Pie Recipe, that she wanted a Blueberry Pie. So she told  her if you want one go pick some berries and I’ll make you one. And so she did. Her and her brother went to a little field right along a lake to pick some berries. They thought they had gotten enough blue berries for the pie but my mom decided to pick one more.

As she did a snake jumped out at her. Her brother and herself leaped and screamed and ran all the way home dropping berries as they went. They got home and told their mother of their scary story and all she said was, “Well, do you still have enough berries to make your pie!” Haha such like my Grandma to be so unbothered. Luckily they had just enough left in their basket and my grandma was able to make them this delicious Blueberry pie.

  • 1 9 inch unbaked deep dish pie crust chilled

Blueberry Filling

  • 2/3 cup granulated sugar
  • 2 1/2 tbsp cornstarch
  • 2 tbsp fresh lemon
  • 5 cups fresh blueberries, rinsed and dried
  • 1/4 cup brown sugar

Crumble Topping

  • 2/3 cup unbleached all-purpose
  • 1/3 cup brown sugar
  • 1 tbsp granulated sugar

  1. Preheat oven to 375 degrees. Remove the unbaked prepared 9- inch deep dish pie crust and grease the bottom of pie plate. Then bake the pie crust for 25 minutes or until it starts to brown lightly

  2. Remove from oven and set aside to cool. Now it's time to prepare the filling

  3. Combine and whisk together the cornstarch and sugar. Place the dry and clean blueberries in a mixing bowl. Add the sugar/cornstarch mixture and lemon juice. Toss the blueberries to combine to make sugar and everything is coated. Set aside for about 20-40 minutes until the berries start to lease juice. During this time you can start preparing for the topping

  4. In bowl combine the flour, brown sugar, butter and granulated sugar and mix very well. (You can also do this with a food processor). Remove to a small bowl and using a spoon press the topping together to make large chunks. Then set aside in refrigerator.

  5. Now pour the blueberry mixture into the baked pie crust. Now take the crumble mixture out from refrigerator and spread evenly on top.

  6. Bake on baking sheet for 375 degrees for 1 hour.

  7. Once the pie is golden brown remove from oven and allow it to cool.
